Bang Bang Chicken: A Perfect Party Appetizer
Christmas Eve was upon us again! The holiday season arriving, friends and family all together. Every year my family spends Christmas Eve night in Framingham, MA, at our friend’s house who we have known over 30 years! I couldn’t resist but to find a fun appetizer to make and bring to the get together. When I have an excuse to cook for a group, I do not turn it down!
The Bang Bang Chicken sounded perfect and it was! Simple, yet exciting with a hint of hotness and a homemade sauce. This sauce contained mayo, rice vinegar, sweet chili and hot sauce! All together becoming a wonderful way to drizzle onto all the chicken tenders or to have as a dip! Or both! Yum!
The chicken tender pieces were not tough to make, though I must say, the process got a bit messy! Is anything fun without a little mess? Probably not! This reminded me of making Chicken Parmesan. Dipping the chicken in cornstarch, then to the egg mix then finally onto the Panko breadcrumb spice mixture and into the frying pan they go!
If anyone is not familiar with Panko Breadcrumbs in comparison to Italian style breadcrumbs, here is the main difference. I will never go back! Panko Breadcrumbs are a must have! They are a Japanese Style of breadcrumbs and processed from bread without crust. They are made from large flakes instead of crumbs and then dried. Panko Breadcrumbs become much more crispy and crunchy and add a lot of extra crispy flavor to top onto any meal that calls for breadcrumbs! Give them a try!
This appetizer became a crowd pleaser right away! I decided to place a box of toothpicks alongside the tenders, which became an easy way for people to go back for more and dip them into the sweet hot sauce! My next run at this is the Bang Bang Shrimp I cannot wait to try!
